Inspector determined the person in charge did not demonstrate adequate knowledge of food safety.
Inspector observed shellstock tags were not maintained in chronological order and were not dated when the last is used or sold; food employee donning single-use gloves without a prior handwash (employee washed his hands and donned gloves); some refrigerated, ready-to-eat, time/temperature control for safety food held for more than 24 hours and not being date marked; and old food residue on equipment, utensils, trays, table shelves, meat slicer frame and blade and in a small kettle.
Inspector also observed a food employee slicing mangoes, a ready-to-eat food, with bare hands (employee donned gloves); no reminder posted at the handwash sink in the salad station area for food employees to wash their hands; dust and debris on top of the dishwasher in the kitchen; and old product residue on the frames of table mixers and old food residue on table shelves and in the rolling racks.
